To Switch your Ubisoft Account you will need to unlink the account from the Ubisoft website. Simply log in and go to your account information then unlink the account you wish to swap.

Possibly Can’t Unlink on PlayStation
Xbox accounts can be unlinked while PSN accounts only have the ‘Relink’ option. For users on PlayStation, there seems to be no way of unlinking a PSN account from a Ubisoft profile. While other platforms have the option to unlink accounts, players linking PSN accounts might be locked to a single Ubisoft account.
